Crêpes are a versatile dish that is popular worldwide and can be prepared with a variety of fillings and sauces. A distinctive feature of crêpes is their thinness. They are much thinner than typical American pancakes, giving them a more delicate flavor and texture. Today we will cook crêpes with whipped ricotta, fresh fruits and berries. It’s fast, easy and tasty. Save the recipe!
Recipe:
Recipe: 20 crêpes
Eggs — 6
Sugar — 30g
Milk — 750ml (or milk and water 50/50)
Wheat Flour — 250g
Salt — 1 pinch
Melted Butter — 30ml (2 tbsp)
Ricotta — 250g
Fruits — for garnish, to taste
Berries —for garnish, to taste
Method:
To begin with, whisk the eggs and sugar. Add the milk and mix properly. Add a pinch of salt. Keep mixing the batter with a silicone spatula or a wooden spoon and start adding the flour gradually. You’d better do it in 3-4 steps to avoid the lumps. Next strain the batter through a sieve. Cover and put into the fridge for 60 minutes.
You can also cook the batter in a blender. Blend all the ingredients except for the melted butter in a blender for 1 minute at medium speed until smooth. Next strain the batter through a sieve. Cover and put into the fridge for 60 minutes.
In 60 minutes take the batter out of the fridge, add melted butter into it and mix properly. You shouldn’t heat the butter too much. It’s enough to melt it and put away from the heat.
Preheat the frying pan over medium heat. I use 24cm frying pan. After the frying pan is hot grease with olive oil a bit. Pour the batter gradually on the frying pan, spread it evenly slightly tilting in a circular motion. You’d better have a perfect circle with no holes. Fry the crepes at medium heat until golden-brown. Next turn over with the help of a spatula and fry on the other side. You can control the color by yourself. It normally takes from 45 seconds to 1 minute to cook 1 side of a crepe.
After all the crepes are ready, whip the ricotta, adding some icing sugar to it (optional).
You can do it with a whisk or an electric mixer. Next cut the fruits and berries you like. I take peaches, nectarines and raspberries. Then spread the ricotta over the crepes, fold them as the photo shows.
Garnish with fruits and berries. You can also garnish the crepes with some mint and pour some maple syrup.
