Instructions:

In a mixing bowl, combine the milk, heavy cream (or creamy oat), yogurt, mascarpone, and chosen syrup. Mix all ingredients thoroughly until smooth, without whipping. Pour the mixture into a siphon, attach a gas cartridge, shake vigorously, and chill in the refrigerator for 1-2 hours.

Prepare the Filo Chips:

Preheat the oven to 180°C (350°F). Lay the filo sheets on a clean surface and cut them into squares or triangles. Lightly brush each piece of filo with melted butter. For a sweet version, sprinkle the filo with powdered sugar or cinnamon; for a savory option, add a pinch of salt or spices. Place the filo pieces on a parchment-lined baking tray and bake for 5-7 minutes until golden and crisp. Let the chips cool on the tray to achieve maximum crunchiness.

Serving:
